I know I’m supposed to be talking about Jewellery but I’ve just made some delicious cupcakes today and wanted to share the recipe with you!
125g soft butter
125g caster sugar
2 medium eggs (free-range if poss)
125g self-raising flour
1tsp vanilla flavouring or extract
Heat oven to Mark 4/180c. Line a 12 hole bun tin with cases.
In a bowl, whisk the butter and sugar until pale and light. Add the eggs one at a time, whisking well after each addition. Fold in the flour and vanilla.
Using two teaspoons, divide the mixture evenly between the cases. Bake for 12 – 15 mins until golden and springy to the touch. Transfer to a wire rack to cool. Store in an airtight container (in the fridge if you live in Singapore!)
Now, you can ice these cakes as well if you like, but they always disappear before I get around to doing it! With two hungry teens in the house, what do you expect?
